Add 8 slices of bacon into a large pot.

Cook the diced bacon until crispy, then remove and set aside, leaving about half the grease in the pot.

Cube the chicken and add seasonings: 1.5 tsp garlic powder, 1 tsp onion powder, 1.5 tsp paprika, 1.5 tsp salt, 1 tsp pepper, and 1 tsp Italian seasoning.

Sear the seasoned chicken in the leftover bacon grease until golden and fully cooked, then remove and dice it.

Add 1 cup of diced onion to the pot and sauté until soft (3-4 minutes).

Add 1 tbsp of minced garlic and cook for another minute.

Stir in 1/4 cup of flour to make a roux with the bacon grease.

Slowly stir in 4 cups of chicken broth.

Add 1 cup of carrots and 3 cups of broccoli.

Add 1 tsp of chicken bouillon seasoning, 3/4 cup heavy whipping cream, and 3/4 cup half and half.

Stir everything together and simmer for 15-20 minutes until the broccoli is tender.

Add the cooked bacon and chicken back into the pot.

Stir in 1 cup of cheddar cheese until melted and everything is warm.
