1Drain a can of chickpeas and add them to a food processor. Pulse ten times.
2Add the pulsed chickpeas to a bowl. Add cottage cheese, garlic, green onions, tahini, feta, lemon zest, rice flour, salt, cumin, garlic powder, and an egg. Mix well and refrigerate for about 15 minutes.
3Make the burger sauce: in a bowl, add diced dill pickle, capers, Dijon, Greek yogurt, mayonnaise and lemon juice. Mix well.
4Form the chickpea mixture into patties using a cookie cutter and parchment paper. Cut the patties into squares.
5Heat olive oil in a frying pan over medium heat. Fry the patties for 5–8 minutes on each side, until golden brown and crispy.
6Toast the buns.
7Assemble the burger: spread burger sauce on the bottom bun. Add a chickpea patty, tomato slices, and arugula. Top with the other bun.
