Combine olive oil, yogurt, Italian spice, cumin, paprika, coriander, lemon juice, salt, and pepper in a bowl.

Whisk the marinade ingredients until well combined.

Add chicken thighs to the marinade and mix well to coat.

Cut the bottom off a large potato to create a stable base for the homemade spit.

Place two wooden skewers into the potato, ensuring they are sturdy.

Thread each piece of marinated chicken onto the wooden skewers, stacking them to form a chicken gyro spit.

Season chicken broth with some of the same spices used in the marinade.

Pour the seasoned chicken broth around the perimeter of the potato in the baking pan.

Tent the chicken and potato setup with foil.

Bake the chicken until cooked through.

For the tzatziki sauce, combine grated cucumber with Greek yogurt, olive oil, lemon juice, grated garlic, salt, and fresh dill.

Mix the tzatziki ingredients until well combined.

Once the chicken is done, slice it directly from the spit.

Spread tzatziki sauce on a pita bread.

Add sliced chicken on top of the tzatziki.

4 tbsp Fresh Dill Chopped
5 Pita Breads

Tips
Soak wooden skewers in water and dry them well before use.
The Tuscan Spice blend is highly recommended, but store-bought Italian spice can be used as a substitute.
The spices mixed into the chicken broth are optional for seasoning the broth around the potato and chicken.
Slice the chicken directly from the homemade spit.
Customize your gyro with your preferred toppings such as chopped cherry tomatoes, chopped cucumber, and feta cheese.
