Chicken Gyro

Directions

  1. 1Combine olive oil, yogurt, Italian spice, cumin, paprika, coriander, lemon juice, salt, and pepper in a bowl.
  2. 2Whisk the marinade ingredients until well combined.
  3. 3Add chicken thighs to the marinade and mix well to coat.
  4. 4Cut the bottom off a large potato to create a stable base for the homemade spit.
  5. 5Place two wooden skewers into the potato, ensuring they are sturdy.
  6. 6Thread each piece of marinated chicken onto the wooden skewers, stacking them to form a chicken gyro spit.
  7. 7Season chicken broth with some of the same spices used in the marinade.
  8. 8Pour the seasoned chicken broth around the perimeter of the potato in the baking pan.
  9. 9Tent the chicken and potato setup with foil.
  10. 10Bake the chicken until cooked through.
  11. 11For the tzatziki sauce, combine grated cucumber with Greek yogurt, olive oil, lemon juice, grated garlic, salt, and fresh dill.
  12. 12Mix the tzatziki ingredients until well combined.
  13. 13Once the chicken is done, slice it directly from the spit.
  14. 14Spread tzatziki sauce on a pita bread.
  15. 15Add sliced chicken on top of the tzatziki.
  16. 16Add chopped tomatoes and cucumbers.
  17. 17Sprinkle with feta cheese.

  • 4 tbsp Fresh Dill Chopped
  • 5 Pita Breads

Tips

  • Soak wooden skewers in water and dry them well before use.
  • The Tuscan Spice blend is highly recommended, but store-bought Italian spice can be used as a substitute.
