Directions
- 1Add diced onion to a hot oiled pan and cook until tender and golden.
- 2Add diced bell pepper and cook for a couple of minutes.
- 3Add minced garlic and cook for about a minute.
- 4Add tomato sauce, diced tomatoes, chopped basil, oregano, and red pepper flakes, stir, and bring to a boil.
- 5Turn the heat down and let simmer for about 10 minutes.
- 6Add the mixture to a 9x13 baking dish.
- 7Add chicken thighs seasoned with salt and pepper into the sauce.
- 8In a small mixing bowl, add panko breadcrumbs, freshly shredded parmesan cheese, oregano, basil, and olive oil and stir.
- 9Spoon heaps of the mix onto each of the chicken thighs.
- 10Put the whole thing in the oven at 350 for about 45 minutes.
- 11Sprinkle more basil on top.
