Everything but the Bagel Tomato Galettes

Directions
- 1Slice the heirloom tomato.
- 2Unroll the store-bought pie crust and cut into circles using a bowl as a guide.
- 3Spread a layer of chive and onion cream cheese onto each pastry circle.
- 4Add a slice of cheese on top of the cream cheese.
- 5Place a thick slice of heirloom tomato on top of the cheese.
- 6Crimp the edges of the pastry over the tomato.
- 7Whisk an egg in a bowl.
- 8Brush the crimped edges of the pastry with egg wash.
- 9Sprinkle a generous amount of Everything but the Bagel seasoning over the egg-washed edges.
- 10Bake in a preheated oven until golden brown and crispy.
