Mix chile guajillo powder, chicken bouillon, onion powder, garlic powder, and salt to make birria seasoning.

Slice the chuck roast in half, then slice into smaller pieces.

Click on pressure cook and set to 18 minutes.

Add kettle hot water to the Instant Pot, then add the pieces of beef, beef bones, carrots, bay leaves, and birria seasoning.

Mix well and pressure cook for 18 minutes with a quick release.

Chop up the birria.

Pour some of the broth over the meat to keep it moist.

Dip the tortilla in the sauce, and add cheese and meat.

Fold the quesataco over.

To make birria style street corn, add a little butter, corn, birria seasoning, and birria broth in a pot.

Add corn, sour cream, birria meat, cotija, birria seasoning and a little bit of lime or lemon juice in a cup.

Tips
Keep the birria seasoning in your refrigerator or freezer
Keep an eye on the expiration date on your spices
