1Chop an onion and add it to a hot skillet until sauteed.

4Cook until the meat is browned.
5Add 1/2 cup of beef broth, 1/4 cup tomato paste, and 1/4 cup of light cream cheese. Cook until well absorbed.
6Add the meat mixture to 8 low-calorie tortillas.
7Add shredded cheese to the tortillas.
8Fold the tortillas and cook on a medium-high heat pan until golden brown.
9To make the chipotle sauce, add the following ingredients into a blender: 1/2 cup non-fat Greek yogurt, 1 tbsp light mayonnaise, 1 chipotle pepper in adobo sauce, 1 tsp lime juice, 1 tsp honey, 1/2 tsp smoked paprika, 1/2 tsp garlic powder, and a pinch of salt. Blend until smooth.
