1Knead soft dough with all-purpose flour, instant yeast, sugar, salt, and lukewarm water.
2Add olive oil and knead until smooth.
3Let dough rise until doubled in size.
4Deflate the dough, knead again for 5-7 minutes, and divide into 10-11 balls.
5Roll balls evenly into 16-18 cm discs and rest for 10 minutes.
6Cook on a hot tawa on medium-high heat until puffed well, then lower the heat and cook until done.

Add water in a controlled manner; start with 1 cup and slowly add the rest as the amount varies with the quality of the flour (can range from 1 1/4 to 1 1/2 cups).
You can add 2-3 tbsp of flour if needed during the second kneading to make the dough manageable.
The 10-minute rest after rolling is a very important step.
