Directions

  1. 1Take 40 grams of walnuts and almonds and blitz quite finely.
  2. 2Add some cinnamon or whatever spice you prefer, a teaspoon of sugar and 10 grams of salted butter.
  3. 3Mix them all together to a paste.
  4. 4Stick your waffle maker on now to heat up so it's ready for when you need it.
  5. 5Cut squares of ready-rolled puff pastry of 10 centimeters square to fit your machine.
  6. 6Spread some filling on one square of pastry, leaving a border.
  7. 7Sit a second square over the top and lightly press the edges together.
  8. 8Put them in the waffle machine.
  9. 9Press the top down to clamp the two halves together and leave to cook. In my machine, they take three minutes on each side.
  10. 10Make the syrup with 75 grams of runny honey, 20 grams of lemon juice, and a teaspoon of rose water.
  11. 11Mix everything together.
  12. 12When the squares are nicely golden brown, spoon over the syrup straight away so the warm pastry absorbs as much as possible.
  13. 13Cut each waffle into two triangles and serve.

Tips

  • The filling mixture is enough for four baklaffles.
  • If your waffle maker cooks evenly, you probably won't need to turn them halfway through.
  • Spoon over the syrup straight away so the warm pastry absorbs as much as possible. Be generous, do both sides and leave the syrup in the waffle pockets to soak through the layers.
  • They're ready to eat and best as soon as they've cooled and they've soaked up as much syrup as you think you can get away with.
