Start by slicing your halloumi cheese.

Pour hot water over the slices and soak for 15-20 minutes.

Add cucumbers, tomatoes and red onions to a bowl.

Season with salt and pepper, squeeze some lemon juice and add a drizzle of olive oil.

Give the vegetables a gentle mix.

Mix the ingredients for the tzatziki together.

Toss the halloumi slices with dried oregano, some pepper, a drizzle of lemon juice and olive oil.

Cook the halloumi on medium high heat for 1-2 minutes on each side until golden.

Spread the flatbread with tzatziki sauce.

Top with the cucumber, tomatoes and onion mix.

Add the cooked halloumi slices to the flatbread.
