Place a plastic bag inside a bowl and add 1kg of chicken drumsticks.
Season the chicken with 1 teaspoon of salt, 1 teaspoon of dried garlic, 1/2 teaspoon of black pepper, 1 teaspoon of paprika, and 1/2 teaspoon of turmeric. Seal the bag and massage well.
Let the chicken marinate for 30 minutes.
Crack 1 egg into another bowl, add 1/3 teaspoon of salt, and beat with a whisk.
Pour the beaten egg into the bag with the chicken, seal, and massage until all drumsticks are coated.
Add 2 tablespoons of starch to the bag, seal, and massage until evenly coated.
Arrange the chicken drumsticks in a single layer in the air fryer basket and spray with olive oil for extra crispy skin.
Cook at 180°C (350°F) for 25 minutes.
Meanwhile, prepare the dipping sauce by combining 1 tablespoon of mayonnaise, 3 tablespoons of ketchup, 1 tablespoon of mustard, 2 tablespoons of yogurt or sour cream, and chili flakes to taste. Stir until smooth.
Halfway through cooking, remove the basket, flip the drumsticks, and return to the air fryer.
Prepare the salad by adding 1/2 a cubed bell pepper, 1 sliced cucumber, 2 chopped tomatoes, and some spring onion to a bowl. Season with salt and mix well.
Remove the basket from the air fryer and serve the crispy chicken drumsticks with the summer salad.
