Dhaba Style Aloo Gobi Sabzi

Directions

  1. 1Boil and dice the potatoes in 1 inch pieces.
  2. 2Cut the cauliflower into big florets and parboil them.
  3. 3Heat oil in a pan.
  4. 4Add cauliflower florets.
  5. 5Drain the water from potatoes properly before adding it into the oil.
  6. 6Add potatoes to the pan.
  7. 7Fry for 2 minutes.
  8. 8Add turmeric powder and toss them up.
  9. 9Take the potatoes and cauliflower out of the pan.
  10. 10Heat some more oil and ghee in the same pan.
  11. 11Add cumin seeds, cloves, cinnamon and bay leaves.
  12. 12Add onion and stir fry till soft, not brown.
  13. 13Add green chillies, ginger and garlic.
  14. 14Add tomatoes, stir fry and let these tomatoes cook till they are nice and soft.
  15. 15Add coriander cumin seed powder, red chilli powder and garam masala powder.
  16. 16Mash the tomatoes lightly.
  17. 17Add fenugreek leaves and sugar.
  18. 18Add the potatoes and the cauliflower.
  19. 19Toss all of this together for a minute.
  20. 20Add water, salt and let this cook for at least two minutes.
  21. 21Smash one or two pieces of potatoes that helps in thickening the gravy.
  22. 22Turn off the flame.
  23. 23Plate and garnish this with coriander leaves.

  • 250 gms Cauliflower Florets (boiled)
  • 2 Potatoes (diced & boiled)
  • 0.5 tsp Turmeric Powder
  • 1 tbsp Oil
  • 1 tbsp Ghee
  • 1 tsp Cumin Seeds
  • 2 Cloves
  • 2 pieces Cinnamon
  • 2 Bay Leaves
  • 1 Onion (sliced)
  • 2 Green Chillies (chopped)
  • 1 tbsp Ginger (chopped)
  • 1 tbsp Garlic (chopped)
  • 2 Tomatoes (chopped)
  • 1 tsp Coriander Cumin Seed Powder
  • 0.5 tsp Red Chilli Powder
  • 0.5 tsp Garam Masala Powder
  • 1 tbsp Fenugreek Leaves
  • 0.5 tsp Sugar
  • 0.75 cup Water
  • Salt
  • Coriander Leaves

  • Serve with some plain parathas or some rotis.
  • Serve with some onions as well and some lemon juice.
