1In a bowl, marinate the chicken with lemon juice, ginger garlic paste, chopped green chilies, yogurt, fried onions, cumin powder, coriander powder, garam masala powder, red chili powder, Kashmiri red chili powder, turmeric powder, and salt.
2Mix all ingredients thoroughly and leave for 5 minutes.
3For the special masala, dry roast dry red chilies, black pepper, cardamoms, star anise, black cardamom, sinamom sticks, cloves, dry coriander seeds, cumin seeds, and garlic cloves for 40 seconds on medium heat.
4Transfer the roasted spices and fried onions into a jar and blend them until a coarse mixture is formed.
5Heat oil in a pan, add ghee, and then add the marinated chicken.
6Add chopped garlic to the chicken and mix well on high heat for 2 minutes.
7Add some water, cover the pan, and cook for 15 minutes on medium heat.
8Once cooked, add the blended special masala and mix well.
9Add some curry leaves and roast the chicken on high heat for 2 to 3 minutes.
10Finish by adding some chopped coriander leaves and mix well.
