Add 8 cups of peeled and diced Russet potatoes to your slow cooker.

Add a half a cup of diced onion to the slow cooker.

Season with a half a teaspoon of salt and a quarter of a teaspoon of pepper, or more depending on your taste.

Add 32 oz of chicken broth to the slow cooker.

Let the mixture cook on low for about 3 to four hours.

Once the potatoes are cooked, mash them up.

Add 1 1/2 cups of Half & half, 1/2 cup of sour cream, and 2 tablespoons of butter to the soup.
