Directions

  1. 1Add 1 cup of warm water and 1/2 cup of warm milk to a large bowl.
  2. 2Add 1 tablespoon of fast-rise yeast to the bowl.
  3. 3Add 2 tablespoons of honey.
  4. 4Mix the ingredients and let them sit for 5 to 10 minutes until the mixture gets frothy.
  5. 5Add 3 tablespoons of warm, melted butter to the frothy yeast mixture.
  6. 6Add 1 1/2 teaspoons of salt.
  7. 7Start with 2 cups of bread flour and add it to the mixture.
  8. 8Add 1 tablespoon of non-fat dry milk powder (optional).
  9. 9Mix all the ingredients together to combine.
  10. 10Add half of a 1/3 cup of bread flour to the mixture.
  11. 11Once a shaggy dough is formed, sprinkle a silicone mat with the remaining flour.
  12. 12Place the dough onto the mat and sprinkle the top with flour.
  13. 13Knead the dough for 5 to 8 minutes, incorporating the rest of the 1/3 cup of flour while kneading.
  14. 14Clean the bowl with hot water to create a warm environment for the dough to rise.
  15. 15Spread some avocado oil into the clean bowl.
  16. 16Add the kneaded dough to the bowl.
  17. 17Cover the bowl with a lid and let it rest for about an hour to an hour and a half until it doubles in size.
  18. 18Flip the doubled dough out onto the mat.
  19. 19Divide the dough into four large sub rolls.
  20. 20Form each piece of dough into a rectangle, then roll it up, tuck in the sides, push the bottom down, and roll a couple of times to shape the sub roll.
  21. 21Place the formed sub rolls on a parchment-lined cookie sheet.
  22. 22Cover the rolls with plastic wrap.
  23. 23Cover the plastic wrap with a clean towel and let the rolls rest for about 30-45 minutes until they puff up a little.
  24. 24Make an egg wash by mixing one egg with a splash of water.
  25. 25Brush the sub rolls with the egg wash.
  26. 26Take a razor blade or sharp knife and make a score right down the middle of each roll.
  27. 27Bake the sub rolls at 350 degrees Fahrenheit for about 20-22 minutes, or until golden brown.
  28. 28Once baked, optionally top the rolls with a little butter.
  29. 29Let the sub rolls cool.
  30. 30Slice a cooled sub roll and make a sandwich.
  31. 31Wrap the sandwich in parchment paper.

Tips

  • Use bread flour for a chewy exterior, although all-purpose flour will also work.
  • Non-fat dry milk powder keeps the rolls soft and fresh longer.
  • Ensure melted butter is warm to the touch, not hot, to avoid killing the yeast.
  • For smaller sub rolls, baking time might be shorter.
