Directions

  1. 1For the streusel topping, add 1 and 3/4 cups of flour, 1 cup of packed brown sugar, and 2 teaspoons of cinnamon to a large red bowl.
  2. 2Add 3/4 cup of cold butter, cubed into little pieces, to the bowl.
  3. 3Crumble all ingredients together using your hands or a pastry cutter until you achieve the desired consistency.
  4. 4Once the streusel topping is ready, put it in the fridge.
  5. 5In a separate white bowl, add 2 cups of flour, a sprinkle of salt, 2 teaspoons of baking powder, and 1/2 teaspoon of baking soda.
  6. 6Mix the dry ingredients and set them aside.
  7. 7In another red bowl, add 1/2 cup of butter, 2 eggs, 1 cup of sugar, a big splash of vanilla extract, and 1 cup of sour cream.
  8. 8Use a hand mixer to incorporate all the wet ingredients together.
  9. 9Once the moist ingredients are incorporated, add all the dry ingredients at once to the wet ingredients.
  10. 10Mix until well combined.
  11. 11Prepare a loaf pan by lining it with parchment paper.
  12. 12Pour half of the cake batter into the bottom of the prepared loaf pan.
  13. 13Add half of the streusel topping to the center of the cake batter.
  14. 14Drizzle some cinnamon sugar over the streusel topping.
  15. 15Add the remaining half of the cake batter on top of the streusel and cinnamon sugar layer.
  16. 16Top off the cake with the rest of the streusel topping.
  17. 17Add yet another little bit of cinnamon sugar on top of the final streusel layer.
  18. 18Bake in the oven at 350°F for approximately 50 to 55 minutes (actual baking time was 60 minutes).
  19. 19Let the coffee cake sit in the pan for 5 to 10 minutes before removing it.
  20. 20Carefully remove the coffee cake from the loaf pan by lifting the parchment paper.
  21. 21Slice and enjoy the warm coffee cake.

Tips

  • The coffee cake is definitely meant to be eaten warm, especially with coffee.
  • Do not add the dry ingredients half at a time.
