Directions

  1. 1Chop up some capsicum and onions.
  2. 2Dice some paneer into really small cubes.
  3. 3For the tandoori marinade, take some Kashmiri lal mirch and add hot mustard oil into it.
  4. 4Add in the dhaniya powder, haldi, jeera powder, garam masala, kala namak, bhuni kasuri methi powder, ilaichi powder, fresh ginger garlic paste, lemon juice, hung curd, and salt to taste.
  5. 5Mix it up very nicely until it's smooth.
  6. 6For the smoky flavor, give it dhungar by using some live charcoal and ghee.
  7. 7In a hot pan, add some butter, oil, and add in the chopped veggies.
  8. 8Toss it for a minute, add in the paneer, and give it a stir.
  9. 9Add in the marinade and toss it for a couple of minutes.
  10. 10Transfer the mixture to a bowl.
  11. 11Add in some mayonnaise and fresh coriander.
  12. 12Give it a mix.
  13. 13Apply some butter onto a sandwich bread.
  14. 14Spread an even layer of the paneer tikka filling.
  15. 15Add a cheese slice and close your sandwich with another slice of bread.
  16. 16Heat your grill pan really well.
  17. 17Add some butter and place your sandwich on the grill pan.
  18. 18Place some weight on top (a plate is used in the video) to press down the sandwich for a nice, even crust.
  19. 19Once the sandwich is toasted well on one side, flip it.
  20. 20Again, place the weight on top and toast it from the other side as well.
  21. 21Serve the paneer tikka sandwich. It goes really well with some teekhi hari chutney.
