1Cook the pasta for about 6-7 minutes, leaving it slightly undercooked.
2Add butter and one liter of cooking cream to a pot and place it on the stove to warm slowly.
3Grate the six cheeses: Gruyere, sharp cheddar, Romano, Parmesan, mozzarella, and Gorgonzola.
4Once the cream is boiling, start adding the cheeses, including Gorgonzola, Gruyere, sharp cheddar, Pecorino Romano, Parmigiano Reggiano, and a handful of mozzarella.
5Stir the cheese into the cream, allowing it to melt.
6Season with a little salt, pepper, and nutmeg.
7Add 3 oz of tomato sauce to the cheese mixture and fold it in.
8Dump the cooked pasta into the cheese sauce.
9Add a bit more of each cheese and mix well.
10Place the mac and cheese under a broiler (salamander) for about 4 minutes to melt the cheese on top.
11Allow the mac and cheese to rest for 10-15 minutes.

Tips
Use a touch of tomato sauce to fool kids into thinking it's an orange mac and cheese.
Cook pasta slightly shy of fully done as it will continue cooking in the sauce.
