Hot Honey Cajun Chicken with Sweet Potato Mash & Charred Sweetcorn

Directions

  1. 1Roughly dice your sweet potato.
  2. 2Get the diced sweet potato into a pan of boiling water.
  3. 3Once softened, drain the sweet potato.
  4. 4Add salted butter and milk to the sweet potato and mash.
  5. 5Coat your chicken thigh in taco seasoning, garlic powder, paprika and olive oil.
  6. 6Fry the chicken on both sides until it's got a nice crisp and cooked through.
  7. 7Stir through chili flakes, lime juice and honey with the chicken and set aside.
  8. 8Char your sweet corn for a few minutes in the same pan.
  9. 9Stir through black beans, red onion and coriander with the charred sweetcorn.
  10. 10Create a quick cajun yogurt sauce with Greek yogurt, taco seasoning, honey and fresh lime juice.
  11. 11Give the cajun yogurt sauce a mix.

  • 600 g Chicken Thigh Fillets
  • 1 Tbsp Taco Seasoning
  • 1 Tsp Paprika
  • 1 Tsp Garlic Powder
  • 2 Tbsp Olive Oil
  • 1 Tsp Chilli Flakes
  • 0.5 Lime
  • 2 Tbsp Honey
  • 225 g Sweetcorn (Drained weight)
  • 150 g Black Beans
  • 0.5 Red Onion
  • 1 Small Handful Coriander
  • 5 Tbsp Greek Yoghurt
  • 1 Tsp Taco Seasnoing
  • 2 Tbsp Honey
  • 0.5 Lime
  • 800 g Sweet Potatoes
  • 3 Tbsp Milk
  • 25 g Salted Butter
