1In a skillet with three cups of avocado oil, fry eight chiles anchos one by one for about 10 seconds each. Then, fry four chiles de árbol for about 10 seconds each.
2Add half a white onion and cook for about two minutes until golden.
3Add six sliced garlic cloves and cook for about two minutes.
4Add half a cup of peanuts and cook for three minutes.
5Add everything into the blender, once the oil has cooled down. Add some salt.
6Use the pulse method to blend everything.
7Mix in 1 1/2 cups of honey.
8Apply about half of the salsa macha to the ham, making sure to get it in between the slices.
9Add sesame seeds.
10Cover it up with foil and bake at 275°F for 10 minutes per pound.
11After an hour and 20 minutes, baste it and add more salsa macha.
12Increase the heat to 425°F, cook uncovered for 20 minutes.
