Directions
- 1Add half your olive oil to a skillet over medium-high heat.
- 2Add in your diced bell pepper and onion.
- 3Toss in your shredded or diced chicken and the chicken quesadilla seasoning.
- 4Remove from the pan and set aside.
- 5To the same skillet, add the remaining oil and one tortilla to the pan.
- 6Top with a handful of shredded cheese, the chicken and vegetable mixture, hot sauce, and more cheese.
- 7Top with another tortilla.
- 8Cook on both sides until crispy and golden brown.
