Directions
- 1Add 3-4 oz of chicken to each of the three glass bowls.
- 2Add one pepperjack laughing cow cheese wedge to each bowl.
- 3Add 1/3 cup of Greek yogurt or light sour cream to each bowl.
- 4Pour 2 tablespoons of Taco Bell mild sauce into each bowl.
- 5Add 1/2 teaspoon of fajita seasoning to each bowl.
- 6Add 1/4 cup of corn to each bowl.
- 7Squeeze lime juice into each bowl and mix all ingredients together.
- 8Sprinkle Mexican cheese on top of the mixture in each bowl.
- 9Microwave for 1 minute and 30 seconds until the cheese is melted.
- 10Sprinkle Tajin seasoning on top of the melted cheese.
- 11Add a lime wedge on the side of each bowl.
- 12Serve with Quest Tortilla Style Protein Chips.

Tips
- Any chip is fine, but Quest Tortilla Style Protein Chips add 20g of protein.
- This meal prep is high in protein and only takes 1 minute to make, with no cooking required.
- Prepare chicken of choice, then dice into bite sized pieces or shred.
- Add other ingredients to bowl (except the shredded cheese) and mix together until combined.
- Sprinkle with shredded cheese.
- If eating immediately, microwave for 1-30 to 2 minutes or until hot (if saving for later, put in airtight container and microwave before eating).
- I like to eat mine with sliced veggies and tortilla chips for a great, protein packed lunch.
