Moisten the bench a little and lay out your rice paper.

Spritz generously all over the rice paper with water.

Add the filling to the center of each rice paper. Ensure the filling isn't too wet to prevent the dumplings from becoming crispy on the outside.

Fold the rice paper to create a dumpling shape, ensuring a few layers of paper on both sides.

Spread the dumplings out in a large frying pan with some oil.

Cook over low to medium heat until crispy and cooked through.

Serve the cooked dumplings with a soy vinegar dipping sauce.

Drizzle with homemade chilli oil and garnish with fresh spring onions or herbs.

300 g peeled, raw, deveined prawns
2 cloves garlic
2 cm piece of ginger
2 small spring onions
white pepper
0.25 tsp salt
0.5 tsp sugar
1 tsp GF soy sauce
1 tsp sesame oil
0.5 tsp GF oyster sauce
1 tbsp corn starch
oil
soy vinegar dipping sauce
homemade chilli oil
fresh spring onions
herbs

Tips
Microwave a small spoonful of the filling before using it to taste and adjust seasoning.
Don't crack the heat too high when cooking, or they're likely to burn and bust open.
