Rice paper dumplings

Directions

  1. 1Moisten the bench a little and lay out your rice paper.
  2. 2Spritz generously all over the rice paper with water.
  3. 3Add the filling to the center of each rice paper. Ensure the filling isn't too wet to prevent the dumplings from becoming crispy on the outside.
  4. 4Fold the rice paper to create a dumpling shape, ensuring a few layers of paper on both sides.
  5. 5Spread the dumplings out in a large frying pan with some oil.
  6. 6Cook over low to medium heat until crispy and cooked through.
  7. 7Serve the cooked dumplings with a soy vinegar dipping sauce.
  8. 8Drizzle with homemade chilli oil and garnish with fresh spring onions or herbs.

  • 300 g peeled, raw, deveined prawns
  • 2 cloves garlic
  • 2 cm piece of ginger
  • 2 small spring onions
  • white pepper
  • 0.25 tsp salt
  • 0.5 tsp sugar
  • 1 tsp GF soy sauce
  • 1 tsp sesame oil
  • 0.5 tsp GF oyster sauce
  • 1 tbsp corn starch
  • oil
  • soy vinegar dipping sauce
  • homemade chilli oil
  • fresh spring onions
  • herbs

Tips

  • Microwave a small spoonful of the filling before using it to taste and adjust seasoning.
  • Don't crack the heat too high when cooking, or they're likely to burn and bust open.
