  1. 1Cut the beef chuck into portions.
  2. 2Prepare rendang paste by combining Asian shallots, garlic cloves, dried red chilies, galangal, ginger, lemongrass stalks (soft part), turmeric powder, coriander powder, cumin powder, and peanut oil in a blender.
  3. 3Heat a heavy-bottomed pot over medium heat and add enough peanut oil.
  4. 4Cook curry paste for 15-20 minutes until the color darkens.
  5. 5Add beef and mix.
  6. 6Add whole spices (cardamom pods, cinnamon bark or cassia, cloves, and star anise) and bay leaves.
