  1. 1First, start with the add-ins, which are shallots.
  2. 2To prepare shallots, cut one from roots to the top, set one half aside, and slice lengthwise from the side and top, then mince.
  3. 3Next, peel and crush garlic cloves with your palms to remove the skins and cut off the hard ends.
  4. 4Instead of just slicing garlic to mince, use the blunt end of the knife and actually crush the garlic in a slicing motion.
  5. 5Mushrooms are totally optional, but add a nice, rich, savory flavor.
  6. 6Unwrap the plastic around the mushroom container, take what you need, and rewrap it to avoid a mess.
  7. 7Quickly wash and roughly chop mushrooms into whatever size pieces as they will cook down anyway.
  8. 8Set the oven to 375 degrees Fahrenheit or 190 degrees Celsius.
  9. 9Once the pan is hot, cook the turkey on medium heat.
  10. 10While the turkey is cooking, add 1 teaspoon of salt, about 6 grams.
  11. 11A couple of minutes later, flip the meat.
  12. 12After that side browns a bit, add the minced mushrooms to cook down with the meat, letting them release moisture.
  13. 13Continue stirring the meat and mushrooms, and then add the other seasonings: 1 teaspoon of white pepper (it must be white pepper), about 3 grams, and 3 teaspoons (about 1 tablespoon or 3 grams) of rubbed sage (it must be rubbed sage).
  14. 14Break up the mixture more with a potato masher, which does a great job of turning it into a fine mince.
  15. 15Now, add the shallots and garlic.
  16. 16Once everything is well mixed, kill the heat.
  17. 17Crack 18 eggs into a bowl.
  18. 18Add 1 teaspoon of salt (that's 2 teaspoons total now) and whisk away with love.
  19. 19Now for the surprise ingredient: cottage cheese.
  20. 20Add two 14-ounce or 454-gram containers of cottage cheese to the eggs.
  21. 21Next, add the cooked meat and mushroom mixture and whisk everything together.
  22. 22For some color and extra nutrition, add broccoli.
  23. 23Take your frozen vegetable of choice and dump it into a microwave-safe dish.
  24. 24Add a little bit of water and microwave on high for about 4 minutes.
  25. 25Once the broccoli is ready, add it to the mixture.
  26. 26Prepare a 9x13-inch or approximately 23x33 cm glass baking dish; you can grease it with olive oil, though it's not necessary.
  27. 27Pour in the quiche mixture and ensure everything is evenly spread.
  28. 28Toss it in the preheated oven to bake for 40 minutes.
