1Soak 1.5 cups idli rice, 1/2 cup urad dal, and 1 tsp methi seeds for 6–8 hours. Grind with water, mix, and let it ferment overnight.
2In a cooker, add 7–8 tomatoes, 1/2 onion, 1/2 carrot, a small piece of red bell pepper, 1 garlic, 1 amla, and spices (cinnamon stick, 1–2 peppercorns, 1–2 cloves). Pressure cook on low for 3–4 whistles (no extra water), then grind, strain, and cook on low until thick.
3Dry roast rolled oats and grind into a fine powder.
4Mix whole wheat flour, water, salt, and honey or jaggery.
5Mix 2 grated apples, 3/4 cup rolled oats, 1 tbsp flax seeds powder, 1 tbsp chia seeds, cinnamon, and a bit of coconut oil. Bake at 180°C until crunchy (about an hour, stirring in between).
6Dry roast your favorite nuts and seeds, then pulse grind.
7Grind together nuts & seeds powder, oats powder, and soft deseeded dates. Add a bit of ghee and form laddoos.
8Take 500 ml warm milk, add 1 tbsp curd starter, and let it sit in a warm place for 8–10 hours.
9Dry roast dal, curry leaves, peanuts, and mixed nuts. Grind them with jaggery, salt, turmeric, and tamarind.
10Cook chopped strawberries with dates or jaggery powder until mushy. Stir in chia seeds and let it thicken. Finish with a hint of lemon.
11Mix roasted makhanas, ragi murmura, and puffed rice with curry leaves, mustard seeds, a mix of nuts and seeds, and salt.
