Sesame Soy Milk Ramen

Directions

  1. 1Heat 1 tbsp of sesame oil in a large pot over medium heat.
  2. 2Add 1 tbsp minced garlic, 1 tbsp minced ginger, and 1 chopped spring onion to the pot.
  3. 3Sauté the ingredients until fragrant, about 2-3 minutes.
  4. 4Stir in 2 tbsp of miso paste and 2 tbsp of sesame paste until well combined.
  5. 5Add 1 tbsp sake and mix it in.
  6. 6Add 2 cups of vegetable stock to the pot.
  7. 7Bring the broth to a gentle simmer for a couple of minutes.
  8. 8Pour in 2 cups of soy milk and stir well.
  9. 9Let the broth simmer on low heat for 5-7 minutes, allowing the flavors to meld together.
  10. 10In a separate pot, cook 160g of noodles according to the package instructions.
  11. 11Drain the cooked noodles, rinse with cold water to stop the cooking, and set aside.
  12. 12Divide the cooked noodles into two bowls.
  13. 13Ladle the hot broth over the noodles.
  14. 14Add toppings: fried tofu (cooked in the air fryer), roasted pumpkin, cooked bean sprouts, and sliced spring onions.
  15. 15Sprinkle with sesame seeds.
  16. 16Drizzle with chili oil for extra flavor and heat.
