Miso Chicken Rice Bowl with Cozy Miso Broth

Directions

  1. 1Add miso paste to a pot of hot water.
  2. 2Add chicken stock powder to the pot.
  3. 3Add soy sauce to the pot.
  4. 4Add spring onion and grated ginger to the pot.
  5. 5Add rice to the rice cooker.
  6. 6Add water to the rice.
  7. 7Chop garlic.
  8. 8Chop ginger.
  9. 9Chop spring onion.
  10. 10Cut broccoli into florets.
  11. 11Add broccoli to a pot with water to boil.
  12. 12Add chicken thighs to a large bowl.
  13. 13Add chopped garlic, ginger and spring onion to the chicken.
  14. 14Add miso paste to the chicken.
  15. 15Add soy sauce to the chicken.
  16. 16Add Chinese 5 spice to the chicken.
  17. 17Add honey to the chicken.
  18. 18Add salt to the chicken.
  19. 19Add rice vinegar to the chicken.
  20. 20Mix all the ingredients well by hand with a glove.
  21. 21Cover the bowl with plastic wrap and marinate.
  22. 22Cook the chicken in a pan until golden and cooked through.
  23. 23Remove chicken from the pan and add chopped spring onion, garlic, and ginger to the pan with the remaining oil to fry until crispy and golden.
  24. 24Place cooked rice in a bowl.
  25. 25Add the cooked chicken to the bowl with the rice.
  26. 26Add the crispy spring onion, garlic, and ginger on top of the chicken.
  27. 27Add steamed broccoli to the bowl.
  28. 28Pour the miso broth over the rice and chicken.

  • 0.5 tsp Chicken stock powder

  • 0.5 tsp Grated ginger
  • 0.5 tsp Sugar
  • 1 tbsp Miso paste
  • 1 tbsp Soy sauce
  • 1 tsp Rice vinegar
  • 1 tsp Chinese 5 spice
  • 1 tsp Honey
  • 2 Garlic cloves
  • 1 tsp Fresh ginger
  • Spring onion
  • Garlic
  • Ginger
  • Oil
  • Chicken thighs
  • Rice
  • Broccoli

Tips

  • Marinate your chicken for at least 30 min (or overnight for max flavor). Then pan-sear or bake in the oven until golden.
  • Add everything to hot water, stir well, and let it simmer till you run out of patience.
  • Fry spring onion, garlic & ginger in a little oil until crispy and golden. Add on top for crunch and extra flavor.
  • Serve with rice + veggies of your choice (I used steamed brocoli).
