Nourish Bowl with Crispy Edamame & Spiced Cauliflower

Directions

  1. 1Preheat oven to 200°C/390°F.
  2. 2Mix the seasoning/spices in a bowl.
  3. 3Add the cauliflower and edamame on a baking tray.
  4. 4Add the olive oil and seasoning and toss to coat.
  5. 5Place in the oven and bake for 35 minutes.
  6. 6Add all the tzatziki ingredients in a bowl and mix together.
  7. 7For the salad, add the parsley, onion, tomato, cucumber, olive oil, lemon juice, salt and pepper in a bowl, toss to combine.
  8. 8To assemble, add the tzatziki on the base of a bowl.
  9. 9Top with salad, cauliflower, edamame, cranberries and sesame seeds.

  • 1 head cauliflower, cut into small florets
  • 200 g frozen edamame beans

  • 3 tsp ground paprika
  • 1 tsp ground coriander
  • 2 tsp garlic powder
  • 1 tsp chilli flakes
  • 0.25 tsp ground ginger

  • 1 small red onion, finely diced
  • 1 bunch parsley, finely chopped
  • 1 null cucumber, finely diced
  • 1 medium tomato, finely diced
  • 1 small lemon lemon juice
  • 2 tsp olive oil
  • pinch salt
  • 0.75 cup soy or coconut yogurt
  • 1 small cucumber, grated and juice squeezed out
  • pinch salt and pepper
  • 1 small lemon lemon juice
  • 1 null garlic clove minced
  • 1 tbsp chopped fresh dill
  • 0.5 tbsp olive oil
  • 2 tbsp sesame seeds
  • 0.33 cup fresh pomegranate seeds or dried cranberries
