Cut the flank steak against the grain into thin slices.

Transfer the sliced beef into a container.

Add cornstarch and baking soda to the beef.

Pour oyster sauce, soy sauce, and avocado oil into the beef.

Grate garlic and ginger over the beef.

Mix the beef and marinade well.

Cover the container and vacuum seal the beef to marinate.

Prepare the sauce by adding chicken or beef broth to a measuring cup.

Add soy sauce, dark soy sauce, oyster sauce, sesame oil, brown sugar, and white pepper to the broth.

Chop additional ginger and garlic.

Heat oil in a piping hot wok.

Add the marinated beef to the wok and flatten it into a single layer to sear.

Once cooked along the edges, sauté the beef aggressively for one more minute, then remove and set aside.

Add a little more oil, the chopped garlic, and ginger to the wok and let it get golden brown.

Add Shaoxing wine to the wok and let it reduce.

Add broccoli to the wok, stir-fry, and cover until it turns bright green.

Pour in the prepared sauce and bring it to a boil.

Mix equal parts cornstarch and water to create a slurry and add it to the sauce to thicken.

Once the sauce thickens, add the cooked beef back into the wok.

Add the pre-boiled noodles to the wok.

Sauté everything together aggressively one last time.

Serve the beef and broccoli noodles in a bowl.

Garnish with green onions.

Tips
Cut flank steak against the grain to shorten muscle fibers for a tender bite.
Use a Seal Vax container to shorten marination time.
Shaoxing wine gives a true takeout flavor.
Pre-boiled noodles are ready to cook, but other noodles may need to be boiled first.
Sauté beef aggressively for a nice sear.
Sauté broccoli aggressively and cover to turn it bright green.
Mix equal parts cornstarch and water for a slurry to thicken the sauce.
