Beef and Broccoli Noodles

Directions

  1. 1Cut the flank steak against the grain into thin slices.
  2. 2Transfer the sliced beef into a container.
  3. 3Add cornstarch and baking soda to the beef.
  4. 4Pour oyster sauce, soy sauce, and avocado oil into the beef.
  5. 5Grate garlic and ginger over the beef.
  6. 6Mix the beef and marinade well.
  7. 7Cover the container and vacuum seal the beef to marinate.
  8. 8Prepare the sauce by adding chicken or beef broth to a measuring cup.
  9. 9Add soy sauce, dark soy sauce, oyster sauce, sesame oil, brown sugar, and white pepper to the broth.
  10. 10Chop additional ginger and garlic.
  11. 11Heat oil in a piping hot wok.
  12. 12Add the marinated beef to the wok and flatten it into a single layer to sear.
  13. 13Once cooked along the edges, sauté the beef aggressively for one more minute, then remove and set aside.
  14. 14Add a little more oil, the chopped garlic, and ginger to the wok and let it get golden brown.
  15. 15Add Shaoxing wine to the wok and let it reduce.
  16. 16Add broccoli to the wok, stir-fry, and cover until it turns bright green.
  17. 17Pour in the prepared sauce and bring it to a boil.
  18. 18Mix equal parts cornstarch and water to create a slurry and add it to the sauce to thicken.
  19. 19Once the sauce thickens, add the cooked beef back into the wok.
  20. 20Add the pre-boiled noodles to the wok.
  21. 21Sauté everything together aggressively one last time.
  22. 22Serve the beef and broccoli noodles in a bowl.
  23. 23Garnish with green onions.
