1Cook 3/4 lb fettuccine noodles in salted water according to package instructions. Do not rinse.
2Pat dry 1 lb of shrimp with paper towels, then season with 1/2 tsp salt, 1/4 tsp paprika and 1/4 tsp black pepper.
3Place a large pan over medium high heat and add 1 Tbsp of oil. Once the oil is hot, add the seasoned shrimp in a single layer and cook about 2 minutes per side or just until cooked through.
4Finely chop half of a medium onion.
5In the same hot skillet, add 2 Tbsp of butter along with the chopped onion and sauté for about 5 minutes or until soft and golden.
6Mince 1 garlic clove and add it to the pan, stirring for about a minute or until fragrant.
7Add 1/3 cup of white wine and cook until the liquid has mostly evaporated.
8Add 2 cups of cream, bring to a simmer and cook for another 2 minutes.
9Sprinkle 1/3 cup of parmesan cheese, stir until the cheese melts and the Alfredo sauce is smooth.
10Turn off the heat and season with salt and pepper to taste.
11Add the cooked pasta and shrimp and stir until the noodles are well coated.
