Directions

  1. 1Spatchcock the chickens by cutting along the backbone with a knife and then using kitchen scissors to further open them.
  2. 2Flip the chickens over and press down to flatten them.
  3. 3In a bowl, combine Dijon mustard, black pepper, salt, olive oil, and aromat to create the marinade.
  4. 4Mix the marinade well until combined.
  5. 5Brush the mustard marinade generously over the chickens.
  6. 6Slice potatoes thinly using a mandoline.
  7. 7Place the sliced potatoes in a bowl and rinse them with water, squeezing out excess starch.
  8. 8Layer the sliced potatoes in a baking tray.
  9. 9Slice courgettes thinly.
  10. 10Thinly slice garlic.
  11. 11Slice onions thinly.
  12. 12Add the sliced courgettes, onions, and garlic on top of the potatoes in the baking tray.
  13. 13Drizzle olive oil over the vegetables.
  14. 14Add fresh thyme, salt, and black pepper to the vegetables.
  15. 15Mix the vegetables with your hands to evenly distribute the seasonings.
