Directions

  1. 1Heat isomalt and water in a pan until it reaches 160 degrees Celsius/320 degrees Fahrenheit.
  2. 2Let the mixture cool slightly and pour onto a silicone mat.
  3. 3Leave to cool for a minute or two to remove air bubbles.
  4. 4Gently lift the silicone mat and place it on top of an upside-down glass.
  5. 5Leave to cool completely until set.
  6. 6Gently remove the silicone mat.

Ingredients

  • 100 g isomalt
  • 25 ml water
  • edible gold dust (optional)
  • edible glaze (optional)

Tips

  • Overheating will turn the isomalt yellow; not boiling it enough will prevent it from setting.
  • You can paint the edges with edible gold dust.
  • Place the isomalt sail inside an airtight container until use to prevent it from getting cloudy.
  • You can spray it with edible glaze to keep it clear.
