Cod Bowls with Coconut Rice

Directions

  1. 1Dice the red onion, jalapeño, mango, and chop the cilantro.
  2. 2Add the chopped ingredients to a bowl.
  3. 3Add lime juice and salt.
  4. 4Mix the ingredients together.
  5. 5Rinse the rice.
  6. 6Add the rice to a saucepan with water and coconut milk.
  7. 7Combine blackening seasoning ingredients in a small bowl and mix.
  8. 8Cut the fish into filets and pat them dry.
  9. 9Season fish with blackening seasoning all over.
  10. 10Sear fish in a skillet or pan with oil.
  11. 11Cook for 3-4 minutes per side until cooked through.
  12. 12Turn heat down to low, add butter, and spoon melted drippings over the fish.
  13. 13Add rice to serving bowls and add lime zest.
  14. 14Top with cod and a serving of mango salsa.
  15. 15Finish with creamy lime sauce.

  • 14 oz coconut milk
  • 1.25 cup water
  • 1 tsp sugar
  • pinch salt
  • lime zest
  • 1 tsp paprika
  • 1 tsp cayenne
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 0.5 tsp salt
  • 1 mango, diced
  • 1 jalapeno, diced
  • 0.5 red onion, diced
  • Handful cilantro, chopped
  • 1 lime, juiced
  • to taste salt
  • 0.25 cup sour cream
  • 1 lime, juiced
  • 1 tsp blackening mix

Tips

  • For a hotter twist, substitute habanero in the mango salsa.
