Blend silken tofu to make a tofu paste.

Add the tofu paste to plain flour until you have a scraggly dough.

Knead the dough for 10 minutes until smooth.

Use kitchen scissors to cut bits off the dough into roughly the same size, forming noodles.

Cook the noodles until they float to the top.

Heat olive oil in a pan.

Add garlic and onions to the pan and cook until softened.

Add gochujang and fry for 2 minutes.

Add the remaining tofu paste to the sauce for creaminess.

Loosen the sauce with some pasta water.

Toss the cooked noodles in the sauce.

Garnish with parsley.

3 tbsp tofu paste
1 tbsp olive oil
2 cloves garlic sliced
1 small red onion chopped
1 tbsp gochujang
remaining tofu paste
1 third cup pasta water
2 tbsp nutritional yeast (optional)
to taste salt
parsley

Tips
Keep the scissor-cut noodles roughly the same size.
The noodles are ready once they float to the top.
