Scissor Cut Tofu Noodles with Creamy Gochujang Sauce

Directions

  1. 1Blend silken tofu to make a tofu paste.
  2. 2Add the tofu paste to plain flour until you have a scraggly dough.
  3. 3Knead the dough for 10 minutes until smooth.
  4. 4Use kitchen scissors to cut bits off the dough into roughly the same size, forming noodles.
  5. 5Cook the noodles until they float to the top.
  6. 6Heat olive oil in a pan.
  7. 7Add garlic and onions to the pan and cook until softened.
  8. 8Add gochujang and fry for 2 minutes.
  9. 9Add the remaining tofu paste to the sauce for creaminess.
  10. 10Loosen the sauce with some pasta water.
  11. 11Toss the cooked noodles in the sauce.
  12. 12Garnish with parsley.

  • 1 block silken tofu blended (for tofu paste)
  • 1 cup plain flour
  • 3 tbsp tofu paste
  • 1 tbsp olive oil
  • 2 cloves garlic sliced
  • 1 small red onion chopped
  • 1 tbsp gochujang
  • remaining tofu paste
  • 1 third cup pasta water
  • 2 tbsp nutritional yeast (optional)
  • to taste salt
  • parsley

Tips

  • Keep the scissor-cut noodles roughly the same size.
