Slice two chicken breasts in half lengthwise.

Pound the chicken cutlets out.

Season the chicken cutlets with everything listed.

Prepare seasoned flour, three eggs, and Italian style breadcrumbs mixed with a ridiculous amount of Parmesan.

Bread the chicken cutlets by dipping in flour, then egg, then breadcrumbs.

Shallow fry the cutlets over medium-high heat for about 3 to 4 minutes per side.

Set the fried cutlets aside on a wire rack.

In a pan with olive oil and butter, add three shallots and eight cloves of garlic.

Season with salt and pepper as you go.

Sauté the shallots and garlic for about 8 to 10 minutes.

Add a whole can of tomato paste and let it cook for a couple of minutes.

Add two shots (three tablespoons) of vodka and cook it down.

Add a whole can of peeled tomatoes and let it go for about 5 minutes.

Add about a cup of heavy cream.

Blend the sauce with an immersion blender or a regular blender.

Season the sauce.

Add a knob of butter.

Melt in about a half cup of Parmesan into the sauce.

Place all the cutlets into a pan.

Top the cutlets with a good amount of vodka sauce and freshly sliced mozzarella cheese.

Prepare garlic butter by mixing half a stick of butter, parsley, Parmesan, red pepper flakes, and six cloves of garlic.

Spread the garlic butter across some sub buns.

Toss both the chicken parm and garlic bread in the oven at 400°F.

Cook the chicken parm for about 25 minutes and the garlic bread for about 10 to 15 minutes.

Assemble the sandwich by putting pesto on top.

Tips
Adding a ridiculous amount of parmesan to the breadcrumbs is a secret ingredient.
You can use a regular blender if you don't have an immersion blender for the sauce.
Don't worry about the vodka, it cooks out.
