Take 40 grams of walnuts and almonds and blitz them quite finely.

Add cinnamon, a teaspoon of sugar, and 10 grams of salted butter to the nuts.

Mix them all together to a paste.

Stick the waffle maker on to heat up so it's ready for when you need it.

Cut 10 cm squares of ready-rolled puff pastry.

Spread some filling on one square of pastry, leaving a border.

Sit a second square of pastry over the top and lightly press the edges together.

Put the filled pastry squares in the waffle machine.

Press the top down to clamp the two halves together and leave to cook.

Flip the waffles halfway through cooking, cooking for 3 minutes on each side if your machine cooks unevenly.

While the waffles are toasting, make the syrup by mixing 75 grams of runny honey, 20 grams of lemon juice, and a teaspoon of rose water.

When the squares are nicely golden brown, spoon over the syrup straight away so the warm pastry absorbs as much as possible.

Cut the baklaffles into triangles.

Tips
Be generous with the syrup, doing both sides, and leave the syrup in the waffle pockets to soak through the layers.
