Directions

  1. 1Cut the pasta dough into four pieces and then roll them out into squares.
  2. 2Use a decorative pastry wheel to cut a pattern on the edges of the squares.
  3. 3Fold each square into a triangle and fill with a small amount of cheese mixture.
  4. 4Seal the triangles by pressing the edges together to create faggotini.
  5. 5Cut out circles of pasta dough using a cookie cutter.
  6. 6Place a small amount of cheese filling in the center of each circle.
  7. 7Fold the circles in half, creating a semi-circle shape, and press the edges to seal to create scarpinocc.
  8. 8Spread out a large piece of pasta dough and add small mounds of ricotta filling.
  9. 9Fold the pasta dough over the filling and cut out squares with a pastry wheel.
  10. 10Fold the squares into a ravioli shape and crimp the edges.
  11. 11Cut out more squares and fill with spinach mixture.
  12. 12Fold into triangles, and crimp the edges to create cappellacci.
  13. 13Roll out a long piece of pasta dough and pipe a line of ricotta down the center.
  14. 14Fold the dough over the filling, then roll it tightly and cut into small rectangles.
  15. 15Cut each rectangle into triangles to create triangolotti.
