Add pork belly slices to a hot pan.

Flip the pork belly slices to cook on both sides until golden brown.

Cut the cooked pork belly into smaller pieces using scissors.

Remove some of the cooked pork belly from the pan.

Add sliced onion to the pan with the remaining pork belly.

Stir the onion and pork belly together.

Add kimchi to the pan and mix with the onion and pork belly.

Pour water into the pan.

Add minced garlic to the stew.

Add Gochugaru (Korean chili powder) to the stew.

Add Mirim (Korean cooking wine) to the stew.

Pour in kimchi juice.

Add sugar to the stew.

Add anchovy stock powder.

Add light soy sauce.

Stir all the ingredients in the stew.

Place sliced tofu on top of the stew.

Add the previously removed cooked pork belly pieces back on top of the tofu.

Add enoki mushrooms to the stew.

Cover the pan with a lid and let it simmer.

Remove the lid.

Garnish with chopped green onions.
