Layer the rinsed, dried chickpeas into the jar.

Cover the chickpeas with seasonings and lemon juice.

Top everything off with boiling water, leaving an inch of headspace.

Process in a digital pressure canner for 75 minutes. Alternatively, for a water bath, process for 3 hours.

When ready to eat, open the jar and add 1/4 cup of olive oil.

Use an immersion blender until the hummus reaches your desired consistency.

Tips
Rinse dried chickpeas but do not soak overnight. If you soak them, add more to the jar as they won't expand as much.
Leave an inch of headspace in the jar after adding boiling water.
Before adding oil, you might want to dump some liquid out of the jar depending on how much liquid the beans absorbed.
For rebel water bath canning, the time is 3 hours.
