Melt butter and olive oil in a pan over medium heat. Add sliced onions and a pinch of salt. Cook until softened and caramelized, about 25 minutes.
Season chicken thighs with salt, pepper, and garlic powder on the meat side. Place chicken skin-side down in a cold pan. Cook over medium-low heat until the skin is golden and crispy, rendering the fat.
Once chicken is crispy, remove from heat. Add butter, smashed garlic, and fresh rosemary sprigs to the pan to cook with the rendered fat. Place pan in a 400F oven for 10 minutes.
Add smashed garlic and fresh rosemary to the caramelized onions in the pan. Sauté for 45 seconds, then stir in flour until combined.
Deglaze the pan with dry vermouth and reduce by half.
Pour in beef stock and worcestershire sauce, stir, and bring to a simmer.
Add the package of potato gnocchi, cover with a lid, and cook for 3 to 4 minutes.
Stir in grated pepper gruyere, parmesan, dijon mustard, and heavy cream. Simmer for 3 minutes.
Remove chicken from the pan and let rest for 5 minutes.
Deglaze the chicken pan with a splash of vermouth, scraping up the browned bits. Combine the deglazed pan juices with the gnocchi sauce.
Plate the gnocchi, top with the crispy chicken thigh, and garnish with fresh parsley, extra pepper, and parmesan.
