1Chop capsicum and onions. Dice paneer into really small cubes.
2For the tandoori marinade, take Kashmiri lal mirch and add hot mustard oil into it.
3Add dhaniya powder, haldi, jeera powder, garam masala, kala namak, bhuni kasuri methi powder, ilaichi powder, fresh ginger garlic paste, lemon juice, thick hung curd, and salt to taste. Mix it very nicely until smooth.
4For smoky flavor, give it dhungar by using some live charcoal and ghee.
5In a hot pan, add some butter and oil.
6Add the chopped veggies, toss for a minute.
7Add the diced paneer, stir it.
8Add the marinade, toss it for a couple of minutes.
9Transfer the mixture to a bowl.
10Add some mayo and fresh coriander, give it a mix to create the paneer tikka sandwich filling.
11Apply some butter onto a sandwich bread.
12Spread an even layer of the paneer tikka filling.
13Add a cheese slice and close your sandwich with another slice of bread.
14Heat your grill pan really well, add some butter.
15Place your sandwich and place some weight on top (like a plate) to press it down for an even crust.
16Once the sandwich is toasted well on one side, place the weight on top again and toast it from the other side as well.
