1For quick pickled veggies, mix 1 sliced onion, 1/2 sliced capsicum, 1 tbsp lemon juice, and a pinch of salt.
2Rest the pickled vegetables for 30 minutes.
3Heat 10 gm butter.
4Saute 1/2 cup boiled sweet corn for 1 minute.
5Add 1 tsp ginger garlic paste and cook for 1 minute.
6Add salt, 1/2 tsp turmeric powder, 1 tsp red chilli powder, 1 tsp Kashmiri red chilli powder, 1 coriander powder, and 1/2 tsp cumin powder with a splash of water.
7Add 100 gm paneer cubes.
8Saute for 2 minutes.
9Mix 1/2 cup curd with 2 chopped green chillies and red chilli flakes. Whisk till smooth.
10Add the curd mix and cook the filling till it is almost dry but slightly creamy.
11Over a bread, add the filling.
12Add chopped coriander leaves.
13Add a cheese slice.
14Add the pickled veggies.
15Sprinkle with chaat masala.
16Layer with another bread.
17Add butter on one side of the sandwich.
18Grill over a medium flame for 3-4 minutes with a slightly heavy plate.
19Apply butter on another side and turn the sandwich.
20Grill and serve.
