Heat the olive oil in a large pot over medium heat.

Sauté the onion and garlic until softened, about 3-4 minutes.

Add the mushrooms, thyme, and rosemary, and cook until the mushrooms release their juices and start to brown, about 6-8 minutes.

Pour in the broth and bring the mixture to a boil.

Reduce the heat and let it simmer for 10 minutes.

Blend the soup using an immersion blender until smooth, or leave it slightly chunky if you prefer texture.

Stir in the almond milk and the cornstarch mixture if using, and cook for another 3-4 minutes until thickened.
