Home Canned Queso Cheese Sauce

Serves 1

Directions

  1. 1Start with milk products and warm them up enough to melt the shredded cheese into the sauce.
  2. 2Add green chilies (optional).
  3. 3Make the sauce pretty thin, as it will thicken during the pressure canning process.
  4. 4Add the thinned sauce to clean pint-sized jars.
  5. 5Clean the jar rims, add lids, and rings.
  6. 6Place the bottom layer of jars in the All-American canner, ensuring water goes up about halfway on the bottom jars.
  7. 7Put the divider on top.
  8. 8Add the rest of the jars.
  9. 9Lock down the canner, tightening it diagonally like tightening a tire.
  10. 10Turn on the heat and raise it up.
  11. 11Once the canner has been venting steadily for 10 minutes, add the 10 lb weight.
  12. 12Process pint jars for 10 minutes.
  13. 13Process quart jars for 15 minutes.
  14. 14After 10 minutes at 10 lbs of pressure, shut off the stove.
  15. 15Allow the pressure to come back down to 0 lbs.
  16. 16Take off the lid and remove the jars.

Tips

  • Thin out the cheese sauce before filling jars because it will thicken during pressure canning.
  • For pint jars, process for 10 minutes at 10 lbs of pressure.
  • For quart jars, process for 15 minutes at 10 lbs of pressure.
  • If separation occurs after sealing, shake the jars while still warm.
