Directions

  1. 1Place potatoes in a pot, add water and a handful of kosher salt, then bring to a simmer until cooked.
  2. 2Check if potatoes are cooked by sticking with a fork; they should slide right off.
  3. 3Large dice a Spanish onion and place in a bowl.
  4. 4Add a pinch of kosher salt, a pinch of black pepper, one teaspoon of onion powder, one teaspoon of garlic powder, and one tablespoon of paprika to the bowl with the onions.
  5. 5Peel the skin off the cooled potatoes with a paring knife.
  6. 6Split the potatoes down the middle and thick slice them.
  7. 7Add the sliced potatoes to the bowl with the onions and spices, and fold to combine.
  8. 8Heat bacon fat in a pan over medium-low heat.
  9. 9Add the potato and onion mixture to the pan, cook for about a minute, then stir.
  10. 10Brown the potatoes, folding and browning as desired.

Tips
