Salsa Macha

Directions

  1. 1In a pan set to low medium heat, add 1 cup of extra virgin olive oil.
  2. 2Once the oil is hot, start frying six garlic cloves until they are golden.
  3. 3Fry a tortilla until crispy golden.
  4. 4Remove the tortilla and turn off the heat.
  5. 5Fry one chile ancho and about 60 chiles de árbol for 10 to 15 seconds, being careful not to burn them.
  6. 6Once the chiles have changed color, remove everything from the pan.
  7. 7Add all the fried ingredients into the blender.
  8. 8Once the oil has cooled off, add it into the blender as well.
  9. 9Add salt to taste.
  10. 10Blend until you achieve the desired consistency, avoiding over blending.

  • 1 corn tortilla
  • 1 chile ancho
  • 60 chiles de árbol
  • to taste salt

Tips

  • Make sure to fry the chiles de árbol for 10 to 15 seconds to avoid burning them, as this will make your salsa bitter.
  • Do not over blend the salsa.
