High Protein Southwest Chicken Burritos

Directions

  1. 1Season chicken with taco seasoning and juice squeezed from half a lime.
  2. 2Allow the chicken to marinate for at least 15 minutes.
  3. 3Cut up some bell peppers and a white onion.
  4. 4Add them into a skillet and allow them to sauté until tender.
  5. 5Add corn and black beans, season with salt and pepper, and allow them to sauté a bit more.
  6. 6Add marinated chicken into an air fryer or oven.
  7. 7Air fry at 390°F (199°C) for 20 minutes or bake at 425°F (218°C) for 25-30 minutes.
  8. 8To make the sauce, add nonfat Greek yogurt, chipotle in adobo, honey, lime juice, salt, and garlic powder into a blender.
  9. 9Blend until the sauce is nice and smooth.
  10. 10Once the chicken is fully cooked, slice and dice it.
  11. 11Add the chicken onto a low-calorie wrap.
  12. 12Add the sautéed veggies and some low-fat cheese.
  13. 13Roll the burritos tightly.
  14. 14Place them onto a medium-high heat pan until they are nice and golden brown.

  • 2 tbsp chipotle in adobo
  • 1 tbsp honey
  • 1 lime juice
