Easy Protein Cinnamon Buns

Directions

  1. 1In a bowl, mix the bread flour, sweetener, baking powder, baking soda, and a pinch of salt.
  2. 2Add the Greek yogurt and one egg yolk to the dry ingredients and mix well until it forms a dough.
  3. 3Knead the dough into a smooth ball.
  4. 4Roll the dough out into a square about one inch thick.
  5. 5Spread light butter over the rolled-out dough.
  6. 6Sprinkle a layer of brown stevia and a generous dusting of cinnamon over the butter.
  7. 7Slice the dough into six equal strips and roll them up.
  8. 8In a greased baking dish, press the rolled buns down gently.
  9. 9Bake the buns in the oven at 180°C for 25 to 30 minutes.
  10. 10Meanwhile, make the cream cheese frosting by mixing 45 grams of light cream cheese, 45 grams of vanilla protein powder, sweetener to taste, and a splash of water.
  11. 11Pour the frosting through a sieve to get it silky smooth.
  12. 12Once your buns have cooled, drizzle the frosting over them.
  13. 13Slice and enjoy the protein cinnamon buns.

  • 400 g 0% Greek yoghurt

  • 50 g brown stevia
  • 1 dusting cinnamon
  • 15 g light butter
  • 45 g light cream cheese
  • 45 g vanilla protein powder
  • 1 tsp vanilla extract
  • 1 to taste sweetener
  • 1 splash water

Tips

  • Use one egg yolk to make the buns rich and moist.
