1Dice bell peppers, white onion, and yellow potatoes. Add to a lined baking sheet, sprinkle with salt, spray with olive oil, and add a tiny bit of black pepper. Bake at 400F until completely cooked through.
2Once potatoes are done, top with half a pound of lean ground beef seasoned with taco seasoning. Return to the oven for another 5 minutes until cooked.
3Pour in egg mixture (egg whites and cottage cheese). Top with reduced-fat taco blend cheese and bake at 375F for 20-25 minutes until the egg is set.
4Slice the mixture into 10 pieces.
5Add an egg slice onto a burrito wrap, roll it up, and sear on both sides in a skillet.
6Store in parchment paper or aluminum foil in the refrigerator. Heat up when ready to eat.
